Creamy Frozen Fudgsicles

Ingredients are “per banana”:
1 tbsp cocoa powder
1/4 cup canned full-fat coconut milk
small pinch salt
1/4 tsp pure vanilla extract
sweetener of choice, to taste (stevia, agave, etc.)
Directions:





 
 
  1. Combine all items in a blender.
  2. Pour into popsicle molds and freeze, recipe makes 2-3 pops.
  3. To remove fudgsicles, run under room-temp water for about 15 seconds, then gently wiggle/twist.

Chicken BLT Salad with Paleo Mayo Dressing

Chicken BLT Salad with Paleo Mayo Dressing

Ingredients for salad:
4 boneless chicken breasts
2 T coconut oil
1/2 pound bacon
2 tablespoons red wine vinegar
1/4 cup finely chopped fresh basil
1 pound romaine lettuce - rinsed, dried, and torn into bite-size pieces
1 pint cherry tomatoes, quartered


Directions:
  1. Brown chicken in oil in a large skillet over medium heat, set aside to cool.

  2. Place bacon in same skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving 2 tablespoons of the drippings.

  3. In a small bowl, whisk together the reserved bacon drippings, mayonnaise, vinegar and basil and let dressing stand, covered, at room temperature.

  4. In a large bowl mix together the romaine, tomatoes, bacon and croutons.   Slice the cooked chicken and divide evenly into 4 portions.  Pour the dressing over the salad and toss well.
